A. Goal
To guide you through the process of making a delicious traditional Indonesian dish, Opor Ayam (Chicken Opor).
B. Ingredients
- 1 entire chicken, divide chicken into parts.
- 2 measures of creamy coconut milk
- 3 cloves of garlic
- 5 candlenuts
- 2 teaspoons of coriander seeds
- 3 kaffir lime leaves
- 5 shallots
- 1 teaspoon of turmeric powder
- 2 lemongrass stalks, bruised
- 3 bay leaves
- 2 inches of galangal, bruised
- Salt

C. Steps
- Clean and cut the chicken into pieces.
- Peel and chop the garlic and shallots.
- Grind the garlic, shallots, candlenuts, and coriander seeds into a paste.
- Warm up some vegetable oil in a large pan until it reaches a right temperature.
- Introduce the ground paste to the pan and sauté until fragrant.
- Add all the listed herbs to the pan. Keep sautéing for a while.
- Place the chicken parts into the skillet. Mix thoroughly to cover the chicken with the spices.
- Pour in the coconut milk, then season with salt and sugar to your taste. Stir well.
- Reduce the heat to low. Let it cook approximately for about 30-40 minutes, or until the chicken is fully cooked and tender. Occasionally stir to ensure the coconut milk from separating.
- Adjust the seasoning if needed.
- After the chicken is cooked and the flavors have blended together, take the pan off from the heat.
- Transfer the Opor Ayam to a serving dish.
- Serve hot with steamed rice, ketupat (rice cakes), or lontong (compressed rice).
